CAB
CAB, born in our vineyards in Maremma, is a 100% Cabernet Sauvignon. The name refers to the grape variety and to the Latin expression Caelum ad Beata, meaning “towards the blessed sky”. The wine is produced with the aim of expressing the variety in an elegant and balanced style through careful winemaking, with focus on freshness, structure and ageing potential. The grapes for CAB grow on the sun-drenched hills of our estate Mongibello delle Mandorlaie in Southern Maremma.
CAB, our new wine, is currently released in a limited number of markets.
DESCRIPTION
Name: CAB IGT Toscana
Varietal: Cabernet Sauvignon 100
Soil: Mostly sand, rich with pebble, clay and a volcanic sublayer
Production: Natural fermentation in stainless steel tanks with regular punch downs and open pump overs for two weeks, followed by 16 months in 500 liter barrels of which 10% are new
Profile: Dark ruby red colour. Aromas of ripe plums, dark berries, violet, liquorice and subtle spicy nuances. The taste is mediumbodied with fine grained tannins, balanced structure and a long finish. Serves well with dishes of red meat or game, such as pappardelle with wild boar or grilled beef. Serve at around 18 °C. Potential for ageing up to 10 years.
